Fresh and Chunky Gazpacho
Ingredients:
3 cups chopped tomatoes
1 cup chopped cucumber, peeled and seeded
2/3 cup finely chopped yellow onion
½ cup each chopped red and yellow bell pepper and celery
2 tsp. olive oil
2 tsp. horseradish
2 tsp. balsamic vinegar
2 tsp. brown rice vinegar
¼ tsp. sea salt
2 cups tomato juice
¼ tsp. fresh black pepper
1 clove garlic, minced
Garnish:
¼ cup plain yogurt, or plain non-fat yogurt
¼ cup chopped fresh cilantro
½ avocado, chopped
Procedure:
In a large bowl, combine all ingredients, except garnish items. Cover and chill at least 2 hours or overnight. Serve in chilled bowls and top each serving with a dollop of yogurt, 1 Tbsp. cilantro, and a few avocado pieces.
