So when the thought of making pastry just sounds way too messy & time consuming, this is your go to Pie….who doesn’t love a good Pie!
Ingredients:
- 500 grams beef mince
- 2 tablespoons tomato sauce
- 1 small onion, diced
- 1 teaspoon oregano or mixed herbs
Combine all ingredients in a bowl and mix until well combine. Grease a 23cm pie dish and press mixture firmly in. This will create the thick crust of your pie. Bake in hot oven 200 degrees for 10 minutes. Pour off any excess moisture once cooked.
Cheesy Top:
- 1 clove of garlic, minced
- 4 small zucchinis thinly sliced
- 125 grams mushroom, thinly sliced
- 185 grams Philadelphia cream cheese
- 2 eggs
- 2 tablespoons grated parmesan cheese
Heat a frypan over high and cook garlic, zucchini and mushrooms. You won’t need oil the water from the vegetables is enough not to stick. Let them fry for 3-4 minutes. Beat cream cheese then add eggs and beat until well combine. Stir in cooked vegetables, then pour this onto the beef crust. Sprinkle the top with grated parmasen cheese.
Bake at 180 degrees for 30 minutes, let cool for 5 minutes before serving to allow the pie to set.
Recipe Hints and Tips
- This recipe is not suitable for freezing.
- Great leftovers for work lunches for kids school lunch box as it holds it shape very well.
- Lovely served with a fresh garden salad.
