Sweet Pumpkin Galette:-
SERVES 8
• 2 sheets puff pastry, cut in half
• 2 lb. pumpkin, peeled, seeded, cut into 2-inch thick wedges
• 1 cup sour cream
• 1 cup sweet chili sauce
Preheat oven to 200C/400F . Place the pumpkin wedges on a baking sheet and bake for 15 minutes. Remove and cool slightly. Join two halves of pastry together to create a long rectangular shape and roll in 1-inch of the pastry to create a lip around the frame. Place each length on a parchment paper-lined baking sheet. Spread the sour cream over the base. Lay the pumpkin on top, season with cracked pepper then drizzle generously with sweet chili sauce. Bake for 15 to 20 minutes or until the pastry edges are puffed and golden.
Hint:
Before baking, brush the pastry with beaten egg for a golden finish.
Optional:
Change it up and swap the pumpkin for sweet potato/kumara/yams.xx
