QUICK TUNA MORNAY





Ingredients:

½ onion finely chopped
200g tin plain tuna in brine
½ cup of corn kernels
Cheese Sauce Ingredients
2 teaspoons of margarine
1 tablespoons of plain flour
1 cup of low fat milk
25g cheese grated
½ a teaspoon of American mustard
½ a teaspoon of pepper


Method:

Put the margarine in a pot and melt it over medium/high heat, once it starts to “fry”, add the flour and cook for about 1 minute.
Slowly whisk in milk bit by bit until it is all well combined and there are no lumps.
When the white sauce mixture starts to boil reduce the heat and add the mustard, cheese and pepper.
Continuously whisk the cheese sauce till it thickens and then remove it from the heat.
Add the onion, corn and drained tuna to the cheese sauce mixture and combine well.
It can now be eaten at this stage or follow as below.
Put the whole mixture into an oven proof dish and bake it at 180°C (355°F) for 15 – 20 minutes until it’s bubbling and browning on the top.
This can be served by itself, with bread, rice, pasta or potatoes.
