Caramelised Onion Tarts
Ingredients:
Onion
Mix:
3 sheets
frozen ready-rolled shortcrust pastry, partially thawed
½ cup
caramelised onion
125g blue
cheese, chopped into 24 pieces (you can substituted brie, goat’s cheese or even
tasty cheese if you want)
Optional -
1 tablespoon fresh rosemary or parsley leaves
Egg Mix:
4 eggs
¼ cup
light cream
¼ cup
grated parmesan
Step 1
Preheat
oven to 200°C (180°C fan-forced). Using
a 7cm round cutter, cut 24 rounds from pastry. Press into two lightly greased 12 hole muffin
tins.
Step 2
Place
eggs, cream and cheese in a large jug and whisk to combine. Season with salt and pepper.
Spoon
onion into pastry cases and top with blue cheese if applicable. Pour in egg mix
until almost to the top. Sprinkle with herbs.
Bake
for 12 to 15 minutes or until golden and set.
They will puff up and then relax again.
Serve
warm or cold as canapés or with a light salad as an entrée.
