Antipasto Tart
A delicious medley of flavours that will make your heart sing.
Serves 6
* 1 sheet puff pastry
* 200g antipasto mix
* 3 eggs
* 300g sour cream
Preheat the oven to 200 ̊C/400F. Line a nonstick 20c/9inch square ovenproof dish with baking paper, then with puff pastry. Sprinkle with antipasto mix. In a bowl, beat the eggs and mix in the sour cream. Pour over antipasto and season with sea salt and cracked pepper. Bake for 30 minutes or until golden and set.

This is such a versatile recipe, fill it with whatever vegetables and proteins your family will eat, it’s a great way to use up leftovers.
